My grandpa wanted a rum cake for his 97th birthday. What do you get someone that’s turning 97? Whatever they want, because they’ve earned it!

Razzle Dazzle Rum Cake

Ingredients
- Cake:
- 1/2 cup dark brown sugar
- 1 box yellow cake mix (sue me lol)
- 1 box French vanilla pudding mix
- 1/2 cup chopped pecans
- 1/2 cup water
- 4 eggs
- 1 tbs vanilla extract
- 1/2 cup vegetable oil
- 1/2 cup dark rum (Jamaican suggested)
- 1/2 powdered sugar (optional)
- Glaze:
- 1 1/2 sticks butter
- 2/3 cup water
- 3/4 cup dark rum
- 1 tsp nutmeg
- 1 tsp vanilla extract
- 1 1/2 cup sugar
Instructions
- Preheat oven 325 degrees F
- Grease bundt cake, like over grease it
- Sprinkle brown sugar and pecans on the bottom of pan
- Add all cake ingredients in a bowl
- Mix batter until smooth
- Pour batter into Bundt pan and bake for 45-50 min
- Make the glaze by adding all glaze ingredients into sauce pan
- Remove cake from oven
- Stick toothpick or knife in the middle of cake to ensure that it comes out clean
- Use long toothpick to poke random holes into bottom of the cake
- Drizzle glaze, making sure it becomes absorbed throughout the holes
- Let cake sit for about 10 min.
- Place parchment paper on cake stand so that you can remove it later for a clean stand
- Invert the cake onto your cake stand
- Slowly drizzle or brush glaze on top
- Add additional pecans on top ( powdered sugar optional)
- Serve and smile!
